Established in 2001 as a return to the ideals of the ’American‘ bars of 1920 – 30's Europe and a shelter from a world of fast paced, pre-mixed and artificial drinks, Der Raum is regarded by many as one of the best bars in Australia, if not the world.

Lead by owner/executive bartender Matthew Bax, (currently dividing his time between Der Raum and his most recent venture, Tippling Club in Singapore’s Dempsey Hill) Der Raum is currently developing some of the most innovative cocktails in the world with creations utilizing the cutting edge of culinary techniques and presentation.

Renowned for adopting the latest culinary techniques to reinterpret both long lost classics and their own unique signature cocktails, Der Raums' drink methodology is matched by no other as they spare no expense sourcing the best in European bar equipment and hand pressing the finest seasonal fruit to pair with their selection of super premium and often exclusive spirits and liqueurs to create their award winning cocktail menu’s. Along with importing many products from little known international suppliers, Der Raum also produces many of its on cocktail elixirs including the pre-prohibition and until recently extinct Bokers’ and Abbotts’ bitters.

Der Raums’ penchant for recreating drinks of a bygone ear also extends to the venues soundtrack, as 1920’s - 30’s jazz tunes dominate weeknights while the weekends DJ’s play a revolving selection of Funk, Soul and Latin rhythms as the dedicated bar team navigate the iconic ‘bottle forest’ to ensure the perfect drink is provided to each and every guest.
